It’s amazing how versatile bagels are. You can take bagels as a snack, as a grab and go breakfast treat or as a light meal. Unfortunately, traditional bagels are high in calories so they’re not exactly diet-friendly.

Making these low carb bagels is easy because of the simple ingredients. Best of all, one mozzarella bagel contains a modest 2.4g net carbs! This recipe makes 6 bagels.

Ingredients:

170 grams grated cheese mozzarella
85 grams almond meal or almond flour
2 tbsp. cream cheese full fat
1 egg medium
1 tsp. baking powder
A pinch salt to taste
Sesame seeds

Instructions:

Start by preheating the oven to 425 degrees Fahrenheit and lining a baking tray with parchment paper. In a microwave-safe mixing bowl, combine and mix the grated cheese, the almond flour, and cream cheese them microwave on high for 60 seconds. Stir the mixture thoroughly then nuke again for 30 seconds.

After microwaving the bagel mixture, gradually add the egg, baking powder, and salt and mix well to form the dough. Divide the dough into 6 equal portions then roll each ball into cylindrical shape. Fold the ends of the shaped dough into a circle then squeeze both ends to form a bagel shape.  Gently place the bagels on the baking tray, sprinkle sesame seeds on top then bake for 15 minutes or until golden brown.

Once the bagels are done baking, take the baking tray out of the oven and let the bagels sit for 10 minutes. Transfer the bagels to a cooling rack and leave to cool completely.

Classic Fathead Dough Low Carb Keto Bagels

Love pizza but watching your weight? Try this diet-friendly alternative: fathead dough keto bagels! This recipe will have you making incredibly filling, grain-free and gluten-free bagels that you can eat without the guilt! It only requires 5 key ingredients and yields about 8 bagels.

3 cups mozzarella cheese shredded
2 oz. cream cheese
1¾ cups almond flour
2 large eggs
1 tbsp. baking powder
3 tbsp. everything seasoning (optional)

Instructions:

Start by preheating the oven to 350 degrees Fahrenheit and lining a baking sheet with parchment paper. In a large microwave-safe mixing bowl, combine the mozzarella cheese and the cream cheese. Microwave on high for 2 minutes or until the mozzarella has melted completely.

Stir the cheese mixture then gradually add the almond flour, egg, and baking powder. Stir continuously as you add the ingredients to form the dough. Check the consistency of the dough, if it’s too sticky, knead with your hand. If the dough is still sticky, try adding about ¼ cup almond flour then knead again. If the dough becomes a little hard, reheat in the microwave for 30 seconds then remix.

Once the consistency is perfect, divide the dough into 8 equal portions. Shape each portion into the shape of a bagel. Gently place the bagels on the baking sheet. You can add your favorite toppings or garnish at this point.

Stick the baking sheet in the oven and bake for 15 minutes. To get a gorgeous golden brown, try broiling the bagels for a minute. Leave the low carb bagels to cool completely then serve with your favorite filling!

Jalapeño Low Carb Bagels

Love bagels with a kick of heat? This recipe combines the rich, gooey goodness of mozzy cheese with spicy jalapeño, truly a unique pairing that you cannot help but be addicted to! Though cheesy and flavorful, these bagels are low in calories thanks to the Fathead dough. The recipe yields 6 bagels and contains 273 kcal.

Ingredients:

2 cups grated mozzarella cheese
2 oz. cream cheese
1 cup almond flour
1 teaspoon baking powder
3 jalapeño peppers
2 Eggs
1 oz. cheddar cheese grated

Instructions:

Start by preheating the oven to 400 degrees Fahrenheit and lining a baking sheet with parchment paper. Wash the jalapeño, de-seed, then chop the first two then set aside. Cut the third jalapeño pepper into thin circles, reserve it for garnishing.

In a mixing bowl, combine the baking powder and almond flour. Add the chopped jalapeño peppers and eggs and mix the ingredients until well incorporated. In a separate microwave-safe bowl, combine the grated mozzarella cheese and cream cheese. Microwave on high for 2 minutes (1-minute intervals) and stir the mixture to prevent burns.

Once the cheese has melted, take it out of the microwave and pour the almond flour mixture into the bowl. Mix the ingredients well to form the dough. Knead the dough for a minute or two then divide it into 6 equal portions. Roll each piece then form it into a bagel shape.
